250,000 pounds of turkey annually.


1940The original owners of Strongbow, owners of a turkey farm, were Dr. Walter Thrun and his wife, Bess. They opened Strongbow Inn in the early 1940’s. Strongbow not only had a dining room, there were also eight cabins for overnight guests and three gas pumps. strongbow1950 copy copyWhen Dr. Thrun passed away in 1951, Caroline Thrun Adams (Chuggie) and her husband, Chuck, remained and ran Strongbow for the next several decades.

In the 1980’s, turkeys disappeared from the property—but never from the menu as the tradition for the best turkey around continued on.

In 1993, Russ Adams and his wife, Nancy, purchased the restaurant from Russ’s parents.

In 2013, Luke purchased Strongbow from Russ and Nancy Adams. Luke is a third-generation, family-owned company that has diversified into various commercial divisions.

STRONGBOW MANAGEMENT STAFF

The Strongbow Manager Responsibilities:

The Strongbow Manager is responsible for planning, organizing, directing, controlling, and evaluating daily operations of the restaurant, bar, bakery, and banquet facilities. The Strongbow Manager provides an exceptional experience for all guests who visit our restaurant and bar through prompt addressing of all comments from our guests and employees.

 

The Strongbow Manager duties will include, but are not limited to:

  • Plan, organize, direct, control, and evaluate daily operations of the restaurant.
  • Control cash and other receipts by adhering to cash handling and reconciliation procedures in accordance with restaurant policies and procedures.
  • Achieve company objectives in sales, service, quality, appearance of facility, sanitation, and cleanliness through training of employees and by creating a positive and productive working environment.
  • Ensure team members greet, assist, provide efficient service, and thank guests in a prompt, courteous, friendly, and businesslike manner in order to promote the Strongbow experience.
  • Prepare all required paperwork, including forms, reports, and schedules in an organized and timely manner.
  • Lead by example in all areas by becoming the expert in all aspects of the restaurant.
  • Ensure positive guest service in all areas. Proactively handle all staff and guest requests or concerns quickly with caring and fairness.
  • Supervise, train, and develop team members in accordance with company policies and procedures.
  • Treat all customers and associates in a friendly, courteous manner.

 

Experience/Qualifications:

  • Minimum of 3 years experience as a GM in a high volume fine dining restaurant
  • Have knowledge of service and food & beverage operations, generally involving at least three years of front-of-the-house & back-of-the-house operations and/or assistant management positions
  • Portray a positive attitude and great work habits at all times
  • Must be self-motivated and results-oriented with the ability to function effectively as a team member, yet work independently
  • Leadership skills, including strong communication skills, problem solving, time management, and ability to build strong teams through cross training and development of staff
  • Able to stand, bend, and stoop for long periods of time, up to 10 hours at a time
  • Able to work effectively in a fast-paced environment
  • Proficient in basic computer skills
  • Must be able to work extended hours and a varying work schedule as dictated by the business

STRONGBOW BAKERY STAFF

Strongbow Bakery Production Responsibilities:

Under general supervision performs a variety of baking duties and assists with the preparation of breads, rolls, muffins, cookies, pies, cakes, doughnuts, biscuits and other pastries.  Coordinate completion of tasks and cooperate with other employees, managers, and departments of the company to serve the needs of the customer.

 

The Strongbow Bakery Production Associate duties will include, but are not limited to:

  • Ability to be trained to prepare breads, rolls, muffins, cookies, pies, cakes, doughnuts, biscuits and other pastries, including icings and frostings, according to established recipes.
  • Review production schedules to determine variety and quantity of goods to prepare; Assemble supplies and equipment needed for daily activities.
  • Spread or sprinkle a range of various toppings on specialty baked items.
  • Shape dough for cookies, pies and fancy pastries either by hand or by using dough rollers and cookie cutters.
  • Receive ingredients and other supplies from main kitchen and/or pantry as required for daily operations.
  • Cut and weigh dough into uniform portions with knife or divider, mold dough into loaves or other shapes, and place in pans; proof dough and bake in oven; inspect product for quality during and after baking and make adjustments to processes as required.
  • Clean and maintain work areas, utensils, and equipment.
  • Detect and ensure disposition of spoiled or unattractive food, defective supplies/equipment and/or other unusual conditions.
  • Complete production sheets and other records as required.
  • May be required to prepare goods for special diets.
  • Perform miscellaneous job-related duties as assigned.
  • Treat all customers, co-workers, and supervisors in a friendly, courteous manner.

  • Meet and greet all guests upon arrival and departure ensuring guests receive the Strongbow experience.
  • Promptly greet guests as they are seated after being provided menus; take drink orders.
  • Servers should thoroughly understand and be able to speak to all items on the menu as well as daily specials.  Servers should be prepared to make recommendations to the customer.
  • Accurately account for all guests orders, including special requests.
  • Ensure cleanliness of server stations.
  • Servers are expected to deliver food to guests promptly ensuring food is cooked to order and hot.
  • Treat all customers, co-workers, and supervisors in a friendly, courteous manner.

STRONGBOW HOSTESS STAFF

Strongbow Hostess Staff Responsibilities:

The primary responsibility of the Hostess Staff is to greet all guests who enter the restaurant, ensuring they receive the Strongbow experience. Duties require the ability to cross train in the positions of Lobby and Bakery Retail. Coordinate completion of tasks and cooperate with other employees, managers, and departments of the company to serve the needs of the customer.

 

The Strongbow Hostess Staff duties will include, but are not limited to:

  • Promptly greet all guests as they enter the restaurant; determining their reason for visiting whether it is for the bakery, banquet, restaurant, or bar.
  • Answer the phone in friendly, courteous manner.
  • Assign tables for servers to ensure guests are equally divided amongst servers; seat all guests promptly and courteously.
  • Take reservations as needed.
  • Ensure knowledgeable of all menu items, including bakery case.
  • Ability to understand customers’ needs and suggestive sell items within the bakery case.
  • Appropriately cash out carry out and bakery items.
  • Stock bakery case and accurately record food waste.
  • Respond appropriately to guest requests. Communicate any needs to the server immediately.
  • Keep work area neat and clean at all times; ensure restrooms are adequately stocked and lobby is clean.

STRONGBOW EVENT MAINTENANCE

Event Maintenance Associate Responsibilities:

The Event Maintenance and Setup team is responsible for the general cleanliness and set up and tear down of events on Strongbow property.  Coordinate completion of tasks and cooperate with other employees, managers, and departments of the company to serve the needs of the customer.

 

The Event Maintenance Associate duties will include, but are not limited to:

  • Set up and tear down of all events and weddings on Strongbow premises.
  • Meet and greet all customers.
  • Provide a clean environment for all customers.  This includes: cleaning of the interior room, bathrooms, windows, and kitchen prior to and following events.
  • Maintain general appearance and cleanliness of the exterior parking lot and outside premises.
  • Receive orders and ensure proper storage.
  • Treat all customers and co-workers in a friendly, courteous manner.

 

Experience/Qualifications:

STRONGBOW BARTENTER

Bow Bar Bartender Responsibilities:

As a Strongbow Bartender you must be friendly, outgoing, and possess the ability to communicate with a variety of guests to entertain and serve.  Coordinate completion of tasks and cooperate with other employees, managers, and departments of the company to serve the needs of the customer.

 

The Bow Bar Bartender duties will include, but are not limited to:

  • Communicate with guests using clear and enthusiastic words, tone and body language at all times. Make guests feel appreciated through your actions.
  • Treat all customers, co-workers, and supervisors in a friendly, courteous manner.
  • Work as a team with all Strongbow staff in order to maintain an effective atmosphere and an efficient food and beverage service.
  • Work with others to keep all areas cleaned and stocked to Strongbow standards at all times.
  • Mix, garnish and serve alcoholic and non-alcoholic drinks for guests of bar and dining room following standard recipes.
  • Wash and sterilize all glasses.
  • Be attentive and anticipate your guest’s needs.  Offer your assistance before the guests has to ask for it.
  • Accurately account for all beverages and cash out accordingly.
  • Responsible service of alcohol.  Do not hesitate to ask for management intervention if necessary.
  • Perform other duties as directed.

STRONGBOW KITCHEN STAFF

Strongbow Kitchen Staff Responsibilities:

The kitchen staff is made up of Level 1 staff who are primarily responsible for food preparation.  Level 2 staff are primarily responsible for the preparation of salads.  Level 3 staff primarily work with hot food.  The kitchen staff is responsible for the preparation of food complying with all applicable sanitation, health, and personal hygiene standards and the established food production programs and procedures.  In addition, the kitchen staff is responsible for appropriate use of facility supplies and equipment to minimize loss, waste, and fraud.  The kitchen staff must coordinate completion of tasks and cooperate with other employees, managers, and departments of the company to serve the needs of the customer.

 

The Strongbow Kitchen Staff duties will include, but are not limited to:

  • Preparation of food served using established production procedures and systems.  Knowledge of cooking procedures and use of kitchen equipment.
  • Ability to effectively communicate with kitchen and serving staff.
  • Determine amount and type of food and supplies required using production systems.
  • Ensure availability of supplies and food or approved substitutions in adequate time for preparation.
  • Comply with established sanitation standards, personal hygiene, and health standards. Observe proper food preparation and handling techniques.
  • Store food properly and safely, including dating of items as well as product rotation.
  • Report necessary equipment repair and maintenance to supervisor.
  • Correctly prepare all food served following standard recipes and special diet orders.
  • Maintain daily production records.
  • Keep work area neat and clean at all times.  Clean and maintain equipment used in food preparation.

STRONGBOW DISHWASHER

Strongbow Busser/Dishwasher Responsibilities:

The primary responsibility of a Busser/Dishwasher is to reset tables in a speedy, professional, and effective manner as guests leave the restaurant.  Bussers/Dishwashers are also responsible for the grooming of the entire restaurant and its perimeters, as well as supporting servers and service staff with refills and clearing tables.  Other duties will be loading and unloading of the dishwasher, sanitizing will be expected as needs arise and may require the ability to cross train in the role of Event Maintenance.  Coordinate completion of tasks and cooperate with other employees, managers, and departments of the company to serve the needs of the customer.

 

The Strongbow Busser/Dishwasher duties will include, but are not limited to:

  • Promptly greet guests as they are seated while providing a basket of bread and menus.
  • Assist the host/lobby with seating rotations by rapidly cleaning tables, chairs and booths, and floors.  Notifying lobby of open seating.
  • Assist servers with specific needs for the table; including, clearing of plates, fresh silverware, refilling beverages, and delivery of food.
  • Assist bartenders with any needs of the bar; including, glassware, bus tubs, juices, and ice.
  • Assist the kitchen by bringing dirty plateware, silverware, and glassware to the kitchen.  Restock serving stations.
  • Assist with the cleanliness of customer service areas; ensure cleanliness of the restaurant.
  • Constantly survey the room checking for service items; including additional water, bread, and drinks.
  • Respond appropriately to guest requests.  Communicate any needs to the server immediately.
  • Keep work area neat and clean at all times.  Clear tables immediately after guests leave.
  • Treat all customers, co-workers, and supervisors in a friendly, courteous manner.
  • Maintains clean, sanitary stock of dishes and utensils.
  • Loads soiled dishes into dish rack and prepares dish machine for set cycle
  • Loads appropriate soap levels and time cycle.
  • Runs dishes through cycle.
  • Unloads and stacks dishes and glassware in appropriate storage area.
  • Sorts silverware and utensils and places them safely in proper storage area.
  • Distributes clean dishes and utensils to proper areas as needed throughout the shift.
  • Operates dish washing equipment in a safe manner.
  • Maintains a clean, sanitary work area and ensures safe storage of dish carts and related supplies.
  • Removes garbage from area at end of shift.
